Perm market for fast food enterprises is still far from saturation. According to BECAR analysts, the share of fast food in the capitals reached 33% of the total number of all public catering points, in the Perm Territory – 7%. A new trend in the development of fast food establishments – the development of national cuisine. However, experts warn: often you can’t use quick cooking – too much risk to health. Fastfood came to Europe and Russia from America with the stereotype of a fat American who was drinking a huge hamburger Coca-Kola. However, the Russian fast food market could not take possession of the Russians unconditional love, offering only foreign sparkling drinks and fries potatoes. Russian mentality, closely related to the climate and living conditions, in the wake of this trend demanded a more familiar cuisine. Against the backdrop of a general struggle for a healthy lifestyle, rapid food enterprises that promote Russian cuisine: pancakes, dumplings and pies were increasingly developing.
At the moment, the main players in the Perm-fast food market are “Rostik’s”, “Tea spoon”, “pancake cub”, “Vivat-cafe”, “Chiken”, “Baskin Robbins” and “Dagging without haste. Declared his arrival in the region and the largest American brand “McDonald’s”.
There is no official definition of a fast food enterprise. The only criterion is speed. The time between the order and its receipt should not exceed two minutes. According to Elena Maksimovich, the head of the marketing department of the pancakes of the “frying pan”, the speed of power consists in the operational preparation of the order, the absence of scurrying waiters and the same type of dishes. By the way, now the pancake format is becoming more attractive for small businesses: if a fast food restaurant costs about 500 thousand dollars, and a cafe of 200 thousand, then pancake will cost 30-50 thousand dollars. At the same time, the payback period is six to eight months. The target audience of fast food enterprises arriving at the market – youth aged 14 to 30 years. At this age, the consumer does not think about his health and can easily pay about 100-150 rubles for lunch. It would seem that there is a demand – there will be a proposal. However, market participants talk about the development of fast foods without optimism. The main reason is the low incomes of the population and the lack of food culture outside the house among adult Permians. But Elena Maksimovich, head of the marketing department of fast service network “Pancake pan”, believes that Russian fast food has a future thanks to its balance between the price and quality of food.
Another problem is product quality. In the press, there are constantly reports of poisoning of food cafe of fast food. The most painful place in the field of catering remains the so -called “eastern” fast food: all kinds of barbecue, more precisely, enterprises where various semi -finished products are prepared on open fire. Irina Podgorbunskaya, a leading specialist expert Rospotrebnadzor in the Perm Territory, calls the main reasons for the poisoning of the technology of cooking and storage of food, the lack of sewage and toilets. Single complaints from the Perm fast food are constantly received, but so far the experts of Rospotrebnadzor do not conduct checks on them.
All doctors and nutritionists are united in opinion: fast food is two types – harmful and very harmful. The researchers found that when eating such food, hidden saturated fats fall into the body, which is a risk factor in cardiovascular disease. After an examination of thousands of patients, doctors concluded that the Western type of diet three times increases the possibility of stomach cancer.
However, the followers of fast food have their own opinion about “tasty and healthy food”. According to Alexander Nikiforov, General Director of the Alendvik group of companies, each person chooses a diet for himself. “From the use of Hamburger and Coca-Cola, nothing terrible will happen once a week,” he believes. Alexander Perevalov, Director of the Ural Regional Nutrition Center, Head of the Department of Hygiene of the PGMA, Professor of the Academy of RAEN, believes that quick preparation food has the right to exist. But, on the other hand, he is alarmed by the results of people’s nutrition research in such institutions. “In the United States, it was established that the risk and possibility of obesity rises with constant nutrition at McDonald’s,” the expert says. The danger lies in the fact that “fast food” weanes the young generation from the traditional power system. “Fast food is unbalanced, we are categorically against its use in schools,” says Mr. Perevalov. Currently, a document is being prepared that regulates food in Perm schools, in which it will be recommended to ban Fastfudov products in schools. “I would advise you to visit catering enterprises with a set of traditional dishes,” he concluded.
