Very simple soup of seasonal vegetables. Take vegetables that are at hand, add paste to them and we can assume that Minestron soup is ready.
Ingredients:
Vegetable or chicken broth – 500 grams.
Color cabbage – several inflorescences
Broccoli – several inflorescences
Sweet Bulgarian pepper – 1 pc.
Ketchup – 2 t. l.
Pasta – 2 handful
Dill, cilantro, green onions, parsley, basilica
Minestron soup recipe
This Italian soup of Minestron is popular in all areas of the country, but there is no accurate recipe. In each area, this soup is preparing with its “highlight”.
We take the pan, pour the broth into it and put it to warm up on the stove.
Take packaging with pasta and look for the time of cooking. Based on this time, calculate when it is necessary to add pasta, taking into account the fact that the vegetables will be cooked for about 10 minutes.
Cut all the vegetables into the same cubes and put them in a boiled broth.
At the very end of the preparation of Minestron, pour the ketchup and pour the greens. Let it boil again and immediately serve to the table, pouring soup on plates and sprinkling it with grated parmesan.
Ideally, of course, to serve soup with pesto sauce, but the grated parmesan is no worse.
